Quinoa and Black Bean Salad


I found this recipe and decided to make a version of it.  I added zucchini, omitted jalepeno and vinegar.  I used fresh lime juice and olive oil as the base.  It turned out tasty but I think it'd be more popular with non-quinoa folks if couscous was substituted.  Hmmmm....  maybe next time.
